Try this delicious Steak Salad soon with my super easy Mexican Salad Dressing and Baja Steak Rub!
We taste food with all of our senses but sometimes I think presentation is just as important. That’s why I love to serve salads on a platter for guests to mix up themselves.
This delicious dish is the best way to get your spring and summer grilling and salad days to great start. Try it soon with the super easy Mexican Salad Dressing mix that I love!
Spicy Steak Salad
- 1 ½ to 2 pound beef flank steak
- Baja Rub (see below)
- 1 head romaine lettuce
- Grape tomatoes (halved and drained)
- Avocados (sliced – do this right before serving)
- 1 can corn, drained
- Colored bell pepper (sliced in bite sized pieces)
- Green onions (sliced)
- You can also add a can of rinsed and drained black beans
- Mexican Salad Dressing (see below)
Score both sides of the steak in a diamond pattern by making shallow diagonal cuts at 1 inch intervals. Place the beef on a tray or in a dish. Sprinkle Baja Rub evenly over both sides of steak; rub in with your fingers. Let stand for 10 minutes.
Meanwhile, make the dressing below and arrange all veggies except for the avocado which you will save for last.
Grill steak until it reaches your desired temp (we like medium rare). After steak has rested for about 5 minutes, slice it thinly across the grain. Serve with your choice of salad ingredients.
Baja Rub: In a bowl, combine 1 teaspoon kosher salt, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1 teaspoon ground black pepper, ½ teaspoon ground cumin, and ½ teaspoon cayenne pepper. Mix well.
Mexican Salad Dressing – I love this easy mix…equal ingredients salsa and thousand island dressing. Add finely chopped chipotle chile pepper to taste (not too much – it’s spicy!)
